Wild Women ate very well at this summer’s retreat. When asked for recipes however, I had to reply, “There aren’t any. This is just how we do it. It’s how we live.” I know that doesn’t exactly help you recreate these dishes at home, however, so I will do my best to remind you of some of the favorites. You have full creative liberty in your own kitchens to season and shake things up how you wish. Go to the local farmers market and explore what is available to you at it’s peak season. Enjoy!
Goddess Quinoa Salad (cook a couple cups of quinoa and add chopped onion, lots of fresh diced tomatoes and cucumbers, a whole avocado, and Amy’s Organic Goddess Dressing. Toss and serve chilled, voila!)
Garden Eggs (saute zucchini and yellow squash slices with olive oil and minced garlic…set aside while you whip and scramble farm fresh eggs, then gently fold everything together in the same pan. if you’d like you can top your eggs with salsa, fresh tomatoes, fresh avocado, fresh basil, or anything else lingering in your garden. Top with cheese of your choice, at the retreat we used mozarella. Serve piping hot with a slice of Great Harvest bread and french press coffee.)
Our green salad contained microgreens and spinach, loads of chopped veggies including red peppers, fresh blueberries, feta cheese and a special balsamic dressing, created and made fresh by me! There is a secret ingredient in this dressing…giant medjool dates. YUM. Get creative with your combinations and make salads come alive!
We also enjoyed Just Local Coffee – Bike Fuel roast, Strawbanero jam, and lemonade made with fresh lemons and fresh muddled mint leaves. The perfect refreshing drink for after our hike!
Devour these delicious mostly-vegetarian dishes and you will surely be satisfied and full. Tons of flavor, loads of nutrients, and very healthy due to the fresh produce, eggs, and whole grains we used. I do have to admit that wild women desire their coffee in the morning…we went through several pots of caffeine that morning.

Here are some of my favorite memories from the Wild Women Adventure Retreat a couple weeks ago…they have really imprinted into my mind and I think of them fondly. Hopefully I will see all of you at future events!
…Libby and her masterful fire-making skills. We did our best with an A-frame to start, had a bit of paper to help us along, and before you know it we had a roaring crackling fire with flames! As we let our now-log cabin burn down we shared personal details and stories with the group. I enjoyed listening to each woman speak, and in the midst of it all Sharon had us all pause and gaze upward to the night sky. Beauty! What a perfect end to our first evening together…
…I also am so pleased that someone had a “first” with our retreat – they had never gone swimming in a river before and they loved it! The current ran strong in the river that day, several feet higher than when Karen and I checked it out a couple days earlier. All that rain had fed the earth and covered over the sandy beach, but we didn’t mind. We had a great time trucking upstream together and then floating down with the current…
…Hula hooping is probably one of my other favorite moments. We had finished the belly dancing class which prepped us perfectly for a low stance and hip shaking! A few of the women really got the hang of it and even asked about hula hoop classes…so stay tuned for future women’s retreats – we will be making our own hoops and learning how to skillfully twirl and whirl with them…

Our theme for the second annual Wild Women Adventure Retreat this weekend is C.O.U.R.A.G.E. What does it take to be brave? How does courage manifest in your life? What helps you step out and be brave? What wisdom can you share with us about learning the skill of courage?
Taking time for ourselves may be the first step. There is less of a need in our world for people to jump out of planes and climb mountains (although it is a blast!) and a far greater need in our world for people to step outside our mainstream culture of convenience and consumerism and step into abundant health…by choice. It takes far more courage to say when something isn’t right, to say we deserve better than what we’ve given ourselves in the past, and to continue down the path toward vitality and living well each day. Let no one stand in your way. Health takes sacrifice. Be brave and claim your health and fitness today!
