This recipe is one of many glorious eats we experienced at the potluck/full moon hike at Karen’s. This one comes to us from Mary H. If you attended that event and still want to share your recipes, send them over in an email! Enjoy!
Sweet Rice Curry
3 tblsp oil
2 tsp curry powder
2 tsp cumin
1-2 bay leaves
1/2 to 1 tsp red pepper flake
1 small onion, minced
3-4 cloves of garlic, minced
1 1/2 cups rice – see note below
1/2 tsp each sea salt and black pepper
3 cups boiling water
3/4 cup nuts (she used pistachios!)
3/4 cup dried fruit (cranberries, cherries, raisins, etc)
Heat oil in large saucepan, and add the next 6 ingredients. Stir often until the onion is starting to become clear and softer. Mix in the rice, hot water, salt and black pepper. Bring to a boil then reduce heat and simmer covered for 45 minutes.
Remove pan from heat and let it sit, covered, for another 15 minutes. Remove bayleaves. Stir in nuts and dried fruit as you wish. Note: Mary uses a mix of wild and brown rice stirred together.
